Steamed Seafood Packets Recipe

Too late for breakfast and too early for lunch? These steamed packets of seafood are neat and delicate and makes and excellent starter or a light lunch.

 

Ingredients

300g Crab meat, fresh or frozen
100g Prawn meat, shelled and chopped
6 - 8 pieces Water chestnuts, chopped
12 pieces White rice wrappers
2 tbsp Bamboo shoots, chopped
2 tbsp Light soy sauce
1 tbsp Spring onions, chopped
1 tbsp Fish sauce
1 tsp Root ginger, chopped
1 piece Banana leave, cut square or round to fit steamer
- Oil  for brushing
- Shredded spring onions for garnishing
- Red chilies, seeded and sliced for garnishing
- Coriander leaves for garnishing

 

Method :

  • Put the prawns, crab meat, bamboo shoots, chestnuts, spring onions and ginger together in a bowl and mix well. Then add the soy sauce and fish sauce and stir till well blended.

  • Take a rice sheet and dip it into warm water, then place it on a flat surface and allow a few seconds to soften.

  • Place a heaped table spoon of the filling in the center of the sheet and fold into a square packets. Repeat for the rest of the rice sheet and seafood mixture.

  • Line a round bamboo steamer with banana leave and brush them with oil.

  • Place packets on the leave and steam over high heat for 8 - 10 minutes or until the filling is cooked.

  • Transfer to a serving plate and garnish with the remaining ingredients.

 

 

Tips: The seafood packets will spread out when steamed, so be sure to space them well apart to prevent them from sticking together. Apart from the crab meat and prawns used, you may add or substitute with other seafood like squids and clam meat. You may even add a little grounded pork meat.
