MIso Breakfast Soup Recipe

Miso is a fermented bean paste that adds richness and flavor to many Japanese soups; this rather unusual soup provides a nourishing start to the day.

 

Ingredients

60 ml Miso paste
3 pieces Shiitake mushrooms, dried
100 g Japanese tofu, diced
1 1/4 liters Vegetable stock
1 stalk Spring onion (cilantro), green part only, sliced

 

Method :

  • Soak the dried mushrooms in warm water for approx. 3 - 4 minutes, drain, slice and set aside.

  • Bring stock to a boil in a saucepan, stir in the miso paste and add in the mushrooms.

  • Lower heat and allow to simmer forapprox. 5 minutes.

  • Spoon soup into individual serving bowls, dividing the tofu equally among the bowls, and garnish with spring onions and serve immediately.
