MIso Breakfast Soup Recipe

|
Miso is
a fermented bean paste that adds richness and flavor to many Japanese soups;
this rather unusual soup provides a nourishing start to the day.
|
Ingredients |
| 60 ml |
Miso paste |
| 3 pieces |
Shiitake mushrooms, dried |
| 100 g |
Japanese tofu, diced |
| 1 1/4 liters |
Vegetable stock |
| 1 stalk |
Spring onion (cilantro), green part only, sliced |
Method :

Soak the dried mushrooms in warm water for
approx. 3 - 4 minutes, drain, slice and set aside.

Bring stock to a boil in a saucepan, stir in the
miso paste and add in the mushrooms.

Lower heat and allow to simmer forapprox. 5
minutes.

Spoon soup into individual serving bowls,
dividing the tofu equally among the bowls, and garnish with spring onions and serve
immediately.
