Lamb And Cucumber Soup Recipe

Ingredients

750 g Plain stock
220 g Lamb steak
1 piece Medium-sized cucumber
1 tbsp Light soy sauce
1 tbsp Chinese rice wine
1 tbsp Rice vinegar
1/2 tsp Sesame oil
- Salt and white pepper.

 

Method :

  • Trim and discard excess fat from the lamb, then thinly slice the lamb into bite-size pieces.

  • Place in a dish and add soy sauce, rice wine and sesame oil, then set aside to marinate for approx. 30 minutes.

  • Halve the cucumber lengthwise and cut it into thin slices diagonally. Do not peel.

  • In a wok, bring stock to a rolling boil and add lamb, stirring to separate the pieces.

  • Return to boil and add the cucumber slices, vinegar and seasoning.

  • Bring to a boil again and serve immediately.
