Lamb And Cucumber Soup Recipe

Ingredients |
| 750 g |
Plain stock |
| 220 g |
Lamb steak |
| 1 piece |
Medium-sized cucumber |
| 1 tbsp |
Light soy sauce |
| 1 tbsp |
Chinese rice wine |
| 1 tbsp |
Rice vinegar |
| 1/2 tsp |
Sesame oil |
| - |
Salt and white pepper. |
Method :
-
Trim and discard excess fat from the lamb, then
thinly slice the lamb into bite-size pieces.

Place in a dish and add soy sauce, rice wine and
sesame oil, then set aside to marinate for approx. 30 minutes.

Halve the cucumber lengthwise and cut it into
thin slices diagonally. Do not peel.

In a wok, bring stock to a rolling boil and add
lamb, stirring to separate the pieces.

Return to boil and add the cucumber slices,
vinegar and seasoning.

Bring to a boil again and serve immediately.
