Chinese Tofu And Lettuce Soup Recipe

A light
clear soup that is full of nourishments and tasty vegetables.

Ingredients |
| 200 g |
Tofu, smoked or marinated, cubed |
| 110 g |
Lettuce, shredded |
| 1 liter |
Vegetable stock |
| 2 tbsp |
Sunflower or groundnut oil |
| 2 tbsp |
Soy sauce |
| 1 tbsp |
Dry sherry |
| 1 tsp |
Sugar |
| 3 stalk |
Spring onion (scallion), sliced diagonally |
| 2 cloves |
Garlic, cut into thin strips |
| 1 piece |
Carrot, thinly sliced in rounds |

Salt and pepper |
Method :

Pre-heat wok, add oil than stir-fry the tofu
cubes until golden brown. Drain with paper towel and set aside.

With some remaining oil in the wok, add the
carrot, garlic and onions to the wok and stir-fry for another 2 - 3 minutes or until carrot
is tender.

Pour in the vegetable stock, soy sauce, sugar,
sherry and lettuce.

Allow to simmer for 2 - 3 minutes in low heat,
season to taste and serve hot.
