Chinese Tofu And Lettuce Soup Recipe

A light clear soup that is full of nourishments and tasty vegetables.

 

Ingredients

200 g Tofu, smoked or marinated, cubed
110 g Lettuce, shredded
1 liter Vegetable stock
2 tbsp Sunflower or groundnut oil
2 tbsp Soy sauce
1 tbsp Dry sherry
1 tsp Sugar
3 stalk Spring onion (scallion), sliced diagonally
2 cloves Garlic, cut into thin strips
1 piece Carrot, thinly sliced in rounds
- Salt and pepper

 

Method :

  • Pre-heat wok, add oil than stir-fry the tofu cubes until golden brown. Drain with paper towel and set aside.

  • With some remaining oil in the wok, add the carrot, garlic and onions to the wok and stir-fry for another 2 - 3 minutes or until carrot is tender.

  • Pour in the vegetable stock, soy sauce, sugar, sherry and lettuce.

  • Allow to simmer for 2 - 3 minutes in low heat, season to taste and serve hot.
