An
unusual dish using swordfish meat with a special marinade
Ingredients
4 pieces
Swordfish steak, approx. 200 g each
1 piece
Kaffir lime leave, bruised
1 stalk
Lemon grass, sliced
1 piece
Fresh lime
1 piece
Large ripe avocado, peeled and stoned
2 1/2 cm
Fresh root ginger, cut into matchstick size
5 tbsp
Brown sugar
3 tbsp
Rock salt
1 tbsp
Grapeseed oil

Salt and ground black pepper
Method :
Prepare marinade by processing the rock salt,
brown sugar and kaffir lime leave together until roughly blended.
In a large bowl, place the swordfish steaks and
sprinkle the marinade over them and add the lemon grass and root ginger. Set aside for 3 - 4
hours to marinate.
Rinse off the marinade and pat dry the fish with
kitchen paper.
Peel the lime and remove any excess pith from
the peel, then cut into very thin strips. Squeeze the juice from the fruit.
Heat wok with oil then add in the lime rind and
then the swordfish steaks. Stir-fry for approx. 4 minutes
Add the lime juice, remove the wok from the heat
and add the sliced avocado to the fish.
