Swordfish With Ginger And Lemon Grass Recipe

An unusual dish using swordfish meat with a special marinade

 

Ingredients

4 pieces Swordfish steak, approx. 200 g each
1 piece Kaffir lime leave, bruised
1 stalk Lemon grass, sliced
1 piece Fresh lime
1 piece Large ripe avocado, peeled and stoned
2 1/2 cm Fresh root ginger, cut into matchstick size
5 tbsp Brown sugar
3 tbsp Rock salt
1 tbsp Grapeseed oil
- Salt and ground black pepper

 

Method :

  • Prepare marinade by processing the rock salt, brown sugar and kaffir lime leave together until roughly blended.

  • In a large bowl, place the swordfish steaks and sprinkle the marinade over them and add the lemon grass and root ginger. Set aside for 3 - 4 hours to marinate.

  • Rinse off the marinade and pat dry the fish with kitchen paper.

  • Peel the lime and remove any excess pith from the peel, then cut into very thin strips. Squeeze the juice from the fruit.

  • Heat wok with oil then add in the lime rind and then the swordfish steaks. Stir-fry for approx. 4 minutes

  • Add the lime juice, remove the wok from the heat and add the sliced avocado to the fish.
