Stir-Fried Salmon Teriyaki Recipe

Tender
salmon fillet marinated in Teriyaki sauce and the crunchy condiment provides an
excellent foil.

Ingredients |
| 650 g |
Salmon fillet, skin removed |
| 2 tbsp |
Vegetable oil or sunflower oil |

Watercress for garnishing |

The Teriyaki sauce |
|
| 2 tbsp |
Dark soy sauce

Sake or rice wine |
| 1 tsp |
Dry white wine |
| 1 tsp |
Caster sugar |

The condiment |
|
| 5 cm |
Fresh root ginger, grated |
| 50 g |
Mooli, grated |
Method :

Prepare the sauce by mixing together the sugar,
white wine, sake or rice wine and soy sauce, stirring until the sugar dissolves.

Cut fillet into thick strips and place in a
bowl, then pour in the teriyaki sauce, coat evenly, and set aside to marinate for 15
minutes.

Prepare the condiment by placing the ginger in a
bowl and stir in the mooli.

Lift marinated salmon strips from sauce mix and
drain.

Heat oil in a wok. Add the salmon in batches and
stir-fry for 3 - 4 minutes or until cooked.

Transfer to serving dish, garnish with
watercress and serve with the mooli and ginger condiment.
