Spicy Salmon Stir-Fry Recipe

Marinating the salmon allows all the flavor to develop, and the lime juice
tenderizes the fish, so it needs very little stir-frying - be careful not to
overcook it.

Salmon steaks of approx. 230 g each - middle bone
removed |

Whole star anise, roughly crushed |
| 2 stalks |
Lemongrass, sliced |
| 1 piece |
Dried chili - roughly crushed |
| 2 tbsp |
Clear honey |
| 2 tbsp |
Grape seed oil |

Salt and ground black pepper |

Juice of finely grated rind of 3 limes |

Lime wedges - garnish |
Method :

Remove salmon skin by inserting a knife at the
thin end of each piece, then sprinkle 1 tsp of salt on the cutting board to prevent the fish
slipping while removing the skin and halve the salmon steak.

Place salmon in a non-metallic dish and add the
star anise, chili, lemongrass, honey, lemon juice and rind. Season well with salt and
pepper, then put in the salmon to coat evenly. Cover and leave in the refrigerator
overnight.

Drain the salmon pieces from the marinade, pat
dry on a kitchen paper and reserve the marinade.

Heat oil in a wok and add in the salmon and
stir-fry, stirring constantly until cooked.

Increase the heat, pour over the marinade and
bring to a boil.

Garnish with lime wedges and serve
