Sea Bass With Chinese Chives Recipe

Chinese chives are commonly available in Asian supermarkets and can be
substituted by Spanish onion, finely sliced.

Ingredients |

Sea bass or total of approx. 500 g |
| 170 g |
Chinese chives |
| 3 tbsp |
Vegetable oil |
| 1 tbsp |
Cornflour |
| 1 tbsp |
Chinese rice wine or dry sherry |
| 1 tsp |
Castor sugar |
| - |
Salt and pepper |
| - |
Flower head of Chinese chives for garnishing |
Method :

Remove scales, rinse and fillet the sea bass.

Cut fillets into large chunks and dust them
lightly with cornflour, salt and pepper.

High heat wok with 2 tablespoons of oil. When
oil is very hot, toss in the fish chunks and sti-fry briefly to seal and set aside.

Cut Chinese into 5 cm lengths and discard the
flowers is any.

Reheat wok with remaining oil and stir-fry the
chives for approx. 30 seconds.

Add in the fish chunks and rice wine and briefly
bring to a boil, then stir in the sugar.

Serve hot with flowering Chinese chives for
garnish.
