Chinese Prawn Fu Yung Recipe

A easy-to-make dish where the preparation can be done well in advance.

 

Ingredients

250 g Uncooked prawns ( shrimps), peeled
3 eggs Beaten, reserving 1 tsp egg white
170 g Green peas
4 tbsp Vegetable oil
1 tbsp Finely chopped spring onions
1 tbsp Chinese rice wine
2 tsp Cornflour
- Salt

 

Method :

  • Beat eggs with a pinch of salt and a few pieces of the spring onions.

  • Heat oil in a wok, add egg mixture and stir to scramble, then remove the scramble eggs and reserve.

  • Mix prawns with a little salt, cornflour paste and one teaspoon of egg white.

  • Stir peas in hot oil, then add the prawns.

  • Toss in the spring onion and stir-fry for another minute, then stir the mixture into the scramble egg with a little salt and rice wine and serve.
