Balti Fried Fish Recipe

A
very popular Pakistani dish for frying freshwater or sea fish. The coastal
city of Karachi is particularly famous for this delicious seafood.

Ingredients |
| 675 g |
White cod fillet |
| 150 ml |
Cooking oil |
| 30 ml |
Cornflour |
| 2 pieces |
Tomatoes |
| 1 piece |
Onion, sliced |
| 2 tbsp |
Fresh coriander, chopped |
| 1 tbsp |
Lemon juice |
| 1 1/2 tsp |
Garam Masala |
| 1 tsp |
Salt |
| 1 tsp |
Garlic pulp |
| 1 tsp |
Dried red chilies, crushed |

Apricot chutney and paratha to accompany |
Method :

Prepare cod fillet by skinning and cutting into
bite-sized pieces and chilling it in the refrigerator.

In a mixing bowl combine together the coriander,
garam masala, crushed red chilies, garlic pulp, salt, onion and lemon juice. Mix well and
set aside.

Place the tomatoes in boiling water for a few
seconds, remove with a slotted spoon and peel off the skins. Roughly chop up the tomatoes
and add to the mixture.

Transfer the mixture to a blender and process
for approx. 30 seconds.

Remove fish from refrigerator and add to the
mixture from the blender and mix thoroughly.

Add the cornflour and mix thoroughly again until
the cod pieces are well coated.

Heat oil in a wok until very hot, then lower the
heat slightly and put in the cod pieces, a few at a time - careful not to splash the oil.

Cook by turning them gently, with a pair of long
chopstick or s slotted spoon, for approx. 5 minutes or until lightly browned.

Remove the fish and drain on kitchen paper.

Serve immediately with apricot chutney and
paratha to accompany.
