Thai Dipping Sauce Recipe

This dipping is Thailand's signature sauce. Well known even in the Western world, it is as flavorful as it is fiery, so use with caution.

 

Ingredients

3 - 4 pieces Small fresh red chilies, seeded and chopped
1 cm Square shrimp paste or 1 tbsp fish sauce
2 cloves Garlic, finely sliced
2 cm Fresh ginger, finely chopped
1 tbsp Vegetable sauce
1 tbsp Coriander root or stem, finely chopped
3 tbsp Dark soy sauce
4 tbsp Sugar
- Juice of 1/2 lime.

 

Method :

  • Heat oil in a wok and add the shrimp paste, garlic, ginger and chilies and stir-fry for 1 - 2 minutes, until softened, but not colored.

  • Remove from heat and add the chopped coriander, sugar, soy sauce and lime juice, mix well.

  • Serve in a small bowl as an accompaniment.

Tip: Thai dipping sauce will keep for up to 10 days in a screw-topped jar in the refrigerator.
