Thai Dipping Sauce Recipe

This
dipping is Thailand's signature sauce. Well known even in the Western world, it
is as flavorful as it is fiery, so use with caution.

Ingredients |
| 3 - 4 pieces |
Small fresh red chilies, seeded and chopped |
| 1 cm |
Square
shrimp paste or 1 tbsp fish
sauce |
| 2 cloves |
Garlic, finely sliced |
| 2 cm |
Fresh ginger, finely chopped |
| 1 tbsp |
Vegetable sauce |
| 1 tbsp |
Coriander root or stem, finely chopped |
| 3 tbsp |
Dark soy sauce |
| 4 tbsp |
Sugar |
| - |
Juice of 1/2 lime. |
Method :

Heat oil in a wok and add the shrimp paste,
garlic, ginger and chilies and stir-fry for 1 - 2 minutes, until softened, but not colored.

Remove from heat and add the chopped coriander,
sugar, soy sauce and lime juice, mix well.

Serve in a small bowl as an accompaniment.

Tip: Thai
dipping sauce will keep for up to 10 days in a screw-topped jar
in the refrigerator. |
