Sweet And Sour Ginger Sambal Recipe

Don't be
fooled by its name, this sambal or accompaniment is fantastic with fish, chicken
or pork - but beware, it is extremely HOT!

Ingredients |
| 6 pieces |
Bird's-eye chilies, slightly seeded and chopped |
| 2 stalks |
Shallots, chopped |
| 2 cloves |
Garlic |
| 2 cm |
Fresh ginger |
| 3 tbsp |
Rice vinegar or white wine vinegar |
| 2 tbsp |
Sugar |
| 1/4 tsp |
Salt |
Method :
-
Put chilies and shallots together in a mortar
with a pestle or grind them in a food processor.

Add the garlic, ginger, sugar and salt and
continue to pound or grind until smooth.

Stir in the vinegar and mix well.
