Chinese Special Fried Rice Recipe

tasty combination of chicken, shrimps and vegetables and fried rice

Ingredients |

Long-grain white rice |
| 350 ml |
Water |
| 115 g |
Cooked chicken, diced |
| 115 g |
Cooked shrimps, peeled |
| 50 g |
Frozen peas, thawed |
| 50 g |
Lettuce, shredded |
| 1 clove |
Garlic, crushed |
| 4 stalks |
Spring onions |
| 1 |
Egg beaten |
| 3 tbsp |
Groundnut oil |
| 2 tbsp |
Light soy sauce |
| 1 tbsp |
Roasted cashew nuts, chopped |

Pinch of caster sugar |

Salt and black pepper. |
Method :

Wash rice by rinsing in two or three changes of
warm water, then drain well.

Put rice in a saucepan or rice cooker and add 1
tablespoon of the oil and the water. If using saucepan, cover and bring to a boil, stir
once, then cover and simmer for approx. 15 minutes until nearly all the water has been
absorbed. Turn off heat and leave, covered, to stand for approx. 10 minutes. Fluff up the
rice with a fork and leave to cool.

Heat remaining oil in a wok and add garlic and
spring onions and stir-fry for 30 seconds or until the flavor or the ingredients is
released.

Add chicken, shrimps and peas and stir-fry for 1
- 2 minutes, then add in the cooked rice and stir-fry for another 2 - 3 minutes.

Make a gap in the middle of the wok (by pushing
away the mixture to the side), pour in the egg and stir-fry until just set.

Stir in the lettuce, soy sauce, sugar and
seasoning.

To serve, transfer to a shallow plate, sprinkle
with the chopped cashew nuts.
