Vietnamese Pork Sausage Recipe

Ingredients

500 g Pork loin
200 g Pig's head meat or increase the pork loin
500 ml Salted water
60 ml Cooking oil
2 pieces Lime, cut into wedges
2 pieces Eggs, beaten
1 piece Large banana leaf
35 g Sesame seeds
20 g Wood ear mushrooms, finely chopped
2 cloves Garlic, crushed
5 stalks Shallots, chopped
3 tbsp Fish sauce
2 tbsp Black peppers, cracked

Method :

  • Prepare the meat by boiling the pork and pig's head meat in salted water for approx. 20 minutes, then drain and de-bone and chop coarsely into very small cubes.

  • Heat oil in a large pan or skillet, and cook the shallots and garlic until soft and add in the pork, mushrooms and pepper.

  • Continue cooking and stirring until mushrooms are soft; finish with sesame seeds.

  • Remove from heat and stir beaten egg through the pork mixture.

  • Spoon mixture onto the banana leaf, wrap and tie with a string.

  • Place the package in a steamer over rapidly boiling water and steam for approx, 2 hours.

  • Unwrap and slice thinly through.

  • Serve with fish sauce and lime juice.
