Pork loin |
| 200 g |
Pig's head meat or increase the pork loin |
| 500 ml |
Salted water |
| 60 ml |
Cooking oil |
| 2 pieces |
Lime, cut into wedges |
| 2 pieces |
Eggs, beaten |
| 1 piece |
Large banana leaf |
| 35 g |
Sesame seeds |
| 20 g |
Wood ear mushrooms, finely chopped |
| 2 cloves |
Garlic, crushed |
| 5 stalks |
Shallots, chopped |
| 3 tbsp |
Fish sauce |
| 2 tbsp |
Black peppers, cracked |
Method :

Prepare the meat by boiling the pork and pig's
head meat in salted water for approx. 20 minutes, then drain and de-bone and chop coarsely
into very small cubes.

Heat oil in a large pan or skillet, and cook the
shallots and garlic until soft and add in the pork, mushrooms and pepper.

Continue cooking and stirring until mushrooms
are soft; finish with sesame seeds.

Remove from heat and stir beaten egg through the
pork mixture.

Spoon mixture onto the banana leaf, wrap and tie
with a string.

Place the package in a steamer over rapidly
boiling water and steam for approx, 2 hours.

Unwrap and slice thinly through.

Serve with fish sauce and lime juice.
