Shrimp And Green Mango Salad Recipe

This is essentially a variation of the
traditional Vietnamese shrimp salad, using tart and unripe mango instead of lotus root.
Green papaya may be substituted.
Ingredients |

150 g
1 tbsp
Garnish:
2 tbsp
2 tbsp
2 pieces |
White shrimps, medium size.
Fish sauce dip
Green Mango, finely sliced
Chopped rau ram (polygonum) leaves
Chives
Fried shallots
Red chilies, medium sized and finely cliced |

Method :

Prepare shrimps by washing, peeling and
de-veining them.

Set up steamer over rapidly boiling water and
place the shrimps inside until shrimps turns bright pink and tender, remove and allow to
cool.

In a mixing bowl, combine the shrimps, mango,
rau ram and fish dip and toss well.

Arrange on a platter, topped with chili,
shallots and chives.
