How to prepare peanut sauce.
Ingredients |
| 100 g |
Pork or chicken liver |
| 125 ml |
Yellow bean sauce |
| 60 ml |
Coconut milk, half the amount |
| 50 g |
Ground peanuts |
| 1 tbsp |
Tamarind juice |
| 1 clove |
Garlic, finely sliced |
| 2 tsp |
Vegetable oil |
| 1 tbsp |
Red chili, finely chopped |
| 1 stem |
Lemongrass, finely chopped |
| 1 tsp |
Sugar |
| 1 tsp |
Salt |
Method :

Saute garlic in vegetable oil until soft, add
liver, chili, yellow beans sauce, lemongrass, half the coconut milk, salt, sugar, tamarind
juice and peanuts.

Bring to a boil and remove from heat.

Blend in a food processor and add remaining
coconut milk.
