Lotus stems, cleaned and cut into 5cm lengths
Shrimps, medium size, peeled, deveined and cooked
Fish sauce dip
Fried shallots
Coriander leaves (cilantro)
Peanuts, coarsely grounded
Lime juice
Sugar
Salt
Polygonum leaves (rau ram), finely chopped - Optional
Prawn crackers
Method :
In a large bowl combine lotus stems, rau ram, salt, sugar and lime juice.
Toss gently and place on a serving plate.
Cut shrimps in half length-wise and arrange on the salad.
Garnish with peanuts, cilantro and shallots.
Serve with fish sauce dip and prawn crackers.
