Bowl steamed rice
Large lotus leaf
Pork or chicken meat, diced
Small shrimps
Dried lotus seeds, boiled and strained
Shallots, chopped
Cooking oil
Salt
Spring onions or scallions or baby leeks, chopped
Pinch of pepper
1 egg, fried and chopped (optional) |

Method :

On medium heat, quickly saute shallots in oil
and add pork, shrimps, lotus seeds, salt and pepper and cook until done.

Mix with steamed rice and stir well. If egg is
used, add to the fried mixture at the same time as the rice.

Remove from heat and place on lotus leaf,
sprinkle with chopped spring onion and fold into a neat package.

leaves are not available, use either a large grape, fig or banana leaf |
