This Vietnamese recipe works well with any type
of fowl or game. The marinades and cooking takes up a considerable amount of time so it
would be best suited for special occasions.
Ingredients

Large whole chicken
Marinade 1:
2 tsp
Pepper
2 tsp
Salt
2 tsp
Sesame oil
2 tbsp
Honey
Marinade 2:
3 tbsp
Honey
2 tbsp
Sweet soy sauce
1 tbsp
Lime juice
1 tbsp
Annatto seed oil
1 tsp
Sesame oil
Method :
Combine all the Marinade 1 ingredients.
Use half of the marinade to rub onto the outside and inside of the chicken and reserve the
remaining marinade. Stitch up chicken with a needle or bamboo skewers and allow to marinate
for at least 1 hour.
Place chicken in a baking pan.
Combine Marinade 2 ingredients. Then pour
the marinade over the chicken and place in an oven at 3750 F ( 1900C
or gas mark 5 ).
Baste the chicken with the remaining Marinade
1 constantly at intervals of approx. 10 minutes.
Bake the bird until the skin is golden brown and
well cooked.
Remove and cut up chicken into serving size and
place on a large plate.
Serve with deep-fried sweet buns or steamed
sticky rice.
