Crab In Beer Broth Recipe

The French have certainly left their mark in Vietnamese cooking.  This innovative dish, which used beer in its broth, is said to have been developed by a French colonial administrator.

Ingredients

Whole large crabs, rinsed, cleaned and halved.

Beer

Watercress

Vegetable oil

Salt

Pepper

Sesame oil

Oyster sauce

Garlic, crushed

Large onion, cut into wedges

Large tomato, cut into wedges

Red chilies, sliced

Fried garlic

 

Method :

  • Fry crabs in vegetable oil over very high heat, to seal in the juices, together with salt, pepper, sesame oil, oyster sauce and garlic for approx. 5 minutes.

  • Add onion, chili and tomato, give it a quick stir-fry, then add beer.

  • Cover and simmer for 5 - 10 minutes or until crabs are cooked.

  • Serve garnish with watercress and fried garlic.
