Stir Fried 'Paddy Chicken' Legs  Recipe -  Kha Kob Phad Ped

 

 

Frogs are commonly referred to as 'paddy chicken'. Found in paddy fields and canals

( klongs ), the Thais has fashion a meal out of its succulent meat found in the legs. Their flavor is delicate and similar to chicken.

 

A super quick dish to prepare!

Ingredients :

8 pairs

1 tablespoon

2 tablespoons

1/2 teaspoon

3 pieces

8 cm

100 ml

 

Frogs' legs ( From Asian wet market/ frozen, from supermarkets )

Green peppercorns

Fish sauce

Palm sugar, chopped

Red chilies, sliced lengthwise

Galangal, cut into matchsticks size

Cooking oil

 

Large handful of basil leaves ( horapa )

 

Method :
  • Heat oil in wok until very hot

  • Add frog's legs and peppercorn and stir fry over high heat for 2 minutes

  • Add chilies, galangal, fish sauce and sugar

  • Mix well and cook for another minute

  • Stir in the basil, then quickly take off the heat and serve.
