Stir-Fried Chicken With Basil And Chilly Recipe

This is an easy dish to prepare and an
excellent choice to introduce the first-timers to Thai cooking. The basil, when
deep-fried, adds another dimension to this wonderful dish. This is because Thai
basil, which is also known as 'Holy basil', has a unique, pungent flavor that is
both sharp and spicy. The dull leaves have serrated edges.

Ingredients :
| 400 - 450g |
Chicken meat, cut into bite-size pieces |
| 12 pieces |
Thai basil leaves |
| 20 pieces |
Thai basil leaves, deep-fried |
| 4 pieces |
Red chilies, seeded and chopped |
| 4 cloves |
Garlic, sliced |
| 3 tbsp |
Vegetable oil |
| 3 tbsp |
Fish sauce |
| 2 tsp |
Dark soy sauce |
| 1 tsp |
Sugar |
| - |
2 red chilies, finely sliced, to garnish |

Method :

Prepare wok heating
the oil and coat it evenly by swirling it around.

Add garlic and
chilies and stir-fry until golden brown.

Add chicken and
stir-fry until it changes color.

Season with fish
sauce, soy sauce and sugar and continue for approx. 3 minutes.

Stir in the fresh
Thai basil leaves and quickly transfer to a serving plate.

Garnish with sliced
chilies and the deep-fried basil.
| Tip:
When deep-frying the Thai basil leaves, make sure that the leaves are
completely dry. Make sure the oil is really hot. Deep-fry for 30 - 40
seconds then lift out and drain on kitchen paper. |
