Stir-Fried Chicken With Basil And Chilly Recipe

This is an easy dish to prepare and an excellent choice to introduce the first-timers to Thai cooking. The basil, when deep-fried, adds another dimension to this wonderful dish. This is because Thai basil, which is also known as 'Holy basil', has a unique, pungent flavor that is both sharp and spicy. The dull leaves have serrated edges.

 

Ingredients :

 

400 - 450g Chicken meat, cut into bite-size pieces
12 pieces Thai basil leaves
20 pieces Thai basil leaves, deep-fried
4 pieces Red chilies, seeded and chopped
4 cloves Garlic, sliced
3 tbsp Vegetable oil
3 tbsp Fish sauce
2 tsp Dark soy sauce
1 tsp Sugar
- 2 red chilies, finely sliced, to garnish
 

Method :

  • Prepare wok heating the oil and coat it evenly by swirling it around.

  • Add garlic and chilies and stir-fry until golden brown.

  • Add chicken and stir-fry until it changes color.

  • Season with fish sauce, soy sauce and sugar and continue for approx. 3 minutes.

  • Stir in the fresh Thai basil leaves and quickly transfer to a serving plate.

  • Garnish with sliced chilies and the deep-fried basil.

Tip: When deep-frying the Thai basil leaves, make sure that the leaves are completely dry. Make sure the oil is really hot. Deep-fry for 30 - 40 seconds then lift out and drain on kitchen paper.
