Green Papaya Salad Recipe

 

This is popular salad that has taken many guises. As green papaya is rather hard to find, a good substitute would be finely grated carrots, cucumber, green apple or thinly sliced white cabbage.

Ingredients :

Green papaya, medium size

Garlic, chopped

Shallots, chopped

Red chilies, seeded and sliced

Salt

Green beans, cut into 2cm lengths

Tomatoes, diced

Fish sauce ( nam pla )

Fine sugar

Peanuts, roasted and crushed

 

Juice of 1 lime

Some sliced red chilies

 

 

Method :
  • Cut papaya into two, lengthwise. Scrape out the seeds with a spoon then peel off papaya skin with a vegetable peeler. Shred the flesh finely using vegetable grater

  • Put garlic, shallots, chilies and salt in a large mortar and grind to a paste with a pestle. Add shredded papaya a little at a time, pounding gently till the papaya shreds become slightly limp and soft

  • Add sliced beans and tomatoes to the mortar and crush  lightly

  • Season mixture with nam pla (fish sauce), sugar and lime juice

  • Transfer to a serving plate and sprinkle with crushed peanuts and sliced red chilies.
