Green papaya, medium size
Garlic, chopped
Shallots, chopped
Red chilies, seeded and sliced
Salt
Green beans, cut into 2cm lengths
Tomatoes, diced
Fish sauce ( nam pla )
Fine sugar
Peanuts, roasted and crushed
Juice of 1 lime
Some sliced red chilies

Method :

Cut papaya into two,
lengthwise. Scrape out the seeds with a spoon then peel off papaya skin
with a vegetable peeler. Shred the flesh finely using vegetable grater
-
Put garlic, shallots,
chilies and salt in a large mortar and grind to a paste with a pestle.
Add shredded papaya a little at a time, pounding gently till the papaya
shreds become slightly limp and soft

Add sliced beans and
tomatoes to the mortar and crush lightly

Season mixture with nam pla
(fish sauce), sugar and lime juice
-
Transfer to a serving plate
and sprinkle with crushed peanuts and sliced red chilies.
