Sri Lanka String Hoppers Recipe

Rice flour
Boiling water
Salt |

Method :
-
Warm the rice flour in a low oven, then sieve
into a bowl.

Add salt, then slowly add hot water and work
into a soft dough.

Place the dough into a string-hopper or
vermicelli press and press the handle to squeeze small, flat noodles patties onto hopper
mats.

Place the mats in a steamer, or large pot with a
trivet at the bottom and sufficient water to just reach the trivet's rung.

Steam until strings are fully cooked and springy
in texture, about 10 minutes.

Remove string hoppers from the steamer and serve
hot with sambals and curries.
