Spicy Pork Curry Recipe

(urumas curry)

Ingredients :

500 g

2 sprigs

Pork, cubed

Water

Onions, chopped

Garlic, chopped

Ginger, chopped

Lemongrass, chopped

Tamarind pulp soaked in 2 tbsp water, stirred and strained

Curry leaves

Roasted curry powder

Black pepper, crushed

Cinnamon stick

Cloves

Cooking oil

 

Method :

  • Heat oil in a wok or pan and saute the onions, garlic, ginger and lemongrass until onions are golden brown.

  • Add all the remaining ingredients in a pot, and bring  to a boil. Reduce heat and simmered uncovered until gravy is thick and the pork tender. The process should take approx. 25 minutes.
