Jaffna Seafood Soup Recipe

(jaffna kool)

RECIPES OF SRI LANKA

Jaffna, in the  north of Sri Lanka is famous for its kool, or rich seafood soup. Originating from the Tamil fishing communities of the north, this soup is traditionally made with whatever leftover seafood is available.

Ingredients :

1 1/2 liters

200 g

Fish or shrimp stock or water

Fish head of grouper, cod or other fish

Flesh of the same fish, cubed

Medium shrimps, peeled with tails intact

Red ( or other ) rice

Tapioca, cut into cubes

Jackfruit seeds

Jackfruit, cubed

Long beans, cut lengthwise

Dried chilies, broken into pieces

Turmeric

Tamarind juice

Salt to taste

 

Method :

  • In a large pan, bring the stock, rice, long beans, tapioca, jackfruit seeds and jackfruit pieces to a boil, reduce heat and simmer for 5 minutes.

  • Add turmeric, flour, salt, chilies and tamarind juice and simmer for another 2 - 3 minutes.

  • Add the fish meat and the fish heat and simmer for another  10 minutes.

  • Add the shrimp and cook for another 10 minutes.

  • Serve hot.
