Vegetables In Coconut Milk Recipe - (Nonya Style)

RECIPES OF SINGAPORE

As Singapore was part of the Straits Settlements this is the Nonya adaptation of the Malay-style vegetables simmered in coconut milk.

Ingredients :

375 ml

Spice paste:

2 pieces

3 pieces

5 stalks

1/2 tsp

1/2 tsp

1 tsp

Thick coconut milk

Carrot, cut into matchsticks (4 cm)

Eggplant, small and cut into matchsticks (4 cm)

Long beans, cut in 4-cm lengths

Cabbage, coarsely shredded

Hard beancurd cake, deep-fried and quartered

Water

Cooking oil

Salt to taste

 

 

Red chilies

Candlenuts

Shallots

Turmeric powder

Dried shrimp paste (Belacan)

Dried prawns, soaked in warm water (5 minutes)

 

Method :

  • Prepare spice paste by blending all ingredients finely. Add a little oil in necessary to keep the blades turning.

  • Heat oil and stir-fry the paste for approx. 5 minutes.

  • Add water and coconut milk and slowly bring to a boil.

  • Add vegetables, beancurd and salt and simmer, uncovered, until the vegetables are just cooked.

  • Serve in a deep bowl.
