Steamed Fish With Salted Plums Recipe

(Teowchew -style Steamed Fish)

RECIPES OF SINGAPORE

A popular and delicious dish that demands the freshest of fish to shine. Salted are available in jars from Asian food stores.

Ingredients :

Seasoning:

4 tbsp

4 tbsp

2 tbsp

2 tbsp

1 tbsp

1 tsp

125 ml

Whole Pomfret, approx. 1 kg.

Fresh or packed salted Chinese Cabbage, chopped

Salted plums (available in jars)

Streaky bacon or  50 g shredded pork (Optional)

Large tomato, cut in wedges

Ginger

Red chilies

Spring onions (scallion), cut in 5 cm lengths

Dried black mushrooms, softened in warm water & sliced

 

 

 

Garlic oil

Oyster sauce

Light soy sauce

Chinese wine

Sugar

Sesame oil

Chicken stock

 

Method :

  • Clean and dry the fish thoroughly.

  • Except for the seasoning ingredients, combine all other ingredients in a bowl.

  • Now combine all the seasoning ingredients and mix well and stir into the bowl with the other items and mix.

  • Lay the fish on a plate which will fit into a steamer or on a tray inside a wok and spread the mixture on top of the fish. If using bacon, cover the fish with the bacon strips. The pork fat will give a unique flavor to the dish.

  • Cover and steam over rapidly boiling water for approx. 20 minutes or until fish is cooked.

  • Take care not to overcook or the fish texture will be spoiled.
