Ingredients :
125 ml
1/2 piece
1 slice
250 ml
4 - 5 pieces
Spice Paste:
2 pieces
8 pieces
3 cloves
1 stalk
3 cm
1 tsp
Cooking oil
Chicken, cut into serving sizes
Asam gelugor or lime juice to taste
Water
Thick coconut milk
Kaffir lime leaves ( daun limau purut )
Salt to taste
Medium sized red onions
Red chilies
Garlic
Lemongrass
Galangal
Turmeric powder
Method :
Prepare spice paste by chopping and blending the ingredients, adding a little oil if necessary to keep the blades turning.
Heat wok or pan with oil and fry the blended ingredients for approx. 5 minutes or til fragrant.
Add the chicken, asam gelugor and water and simmer until the chicken is half cooked.
Add the thick coconut milk and lime leaves and simmer, uncovered, until chicken is tender.
Add salt and lime juice to taste.
