Mango And Salted Egg Salad Recipe

Ingredients :

Green mango, shredded

Ripe plum tomato, sliced

Salted eggs, peeled and chopped

Shallots, chopped

Method :
  • Mix all the ingredients together and serve in a salad bowl. Serves two.

 

To make salted eggs:

  • Heat saucepan with enough water and add 3/4 cup of salt to cover approx a dozen eggs in its shell

  • Boil for 2 minutes then transfer the eggs to sterilized jars and add salted water. Cover and leave for approx 6 weeks. Hard cook the eggs before using.
