Filipino Hot Pot With Rice
Recipe
A favorite one-pot meal that is especially good during the rainy season

Beef, grounded
Pork, grounded
Ripe plantains, peeled and sliced
Eggs
Garlic, minced
Shallots, minced
Tomatoes, diced
Raisins
Peas
Cooking oil, vegetable
Soy
sauce
Peanut oil
Salt
Black pepper

g freshly cooked rice, kept warm

Method :

Use a large deep wok or a stockpot

Heat oil and saute garlic till light brown, then add in the minced
shallots

Add in the tomatoes and cooked for approx 3 - 5 minutes

Stir in the grounded beef, pork and soy sauce and cook till meat is
brown

Add raisins, salt and pepper and stir constantly
-
Add in the peas and allow to simmer for approx 5 minutes

In a separate skillet/wok, heat 3 tbsp of peanut oil and fry the
plantain slices, remove from heat and set aside
-
Add 2 more tbsp of peanut oil and fry the egg, sunny-side up, remove and
set aside

Use a rather large serving platter, arrange the cooked rice with the
meat in the center and top with the fried eggs

Garnish platter with the fried plantain, serve hot
