Chicken Chunks Simmered in Tomatoes Recipe

A classic dish with Spanish influence.

Ingredients :

1 1/2 kg

185 g

125 g

3 cloves

1 cup

2 tablespoons

250 ml

 

Chicken meat, cut into large bite-size pieces

Tomato puree. Available in can form.

Pimentos. Available in can form

Potatoes, medium size, peeled and cubed

Garlic, peeled and crushed

Onions, chopped

Bay leaves

Black pepper

Salt

Cooking oil, vegetable

Water

Method :
  • Heat oil in wok/pan and saute the garlic and onion

  • Add chicken chunks, tomato puree, bay leaves, pepper, salt and water

  • Allow to simmer for approx 20 - 25 minutes over low heat

  • Add potatoes and pimentos

  • Continue to cook for another 5 - 10 minutes or until potatoes are soft

  • Serve hot
