Brown Rice Cakes
Recipe
A
favorite snack that's served with lots of freshly grated coconut.
Ingredients : |

g
500
g
750
ml
1
teaspoon
|
Rice flour
Brown sugar
Water
Lye
water. ( Potassium carbonate solution commonly found in Asian food stores)
Lots of fresh finely grated coconut
|
Method :

Combine all the ingredients in a mixing bowl and mix well

Pour into muffin pans till halfway full
-
Steam in a large pan with a cover.

Water should be constantly 5 cm deep, so check periodically and add more
water if needed till cooking is done
-
Cook for 30 minutes. Tip: If toothpick inserted comes out clean,
then it is cooked.

Remove from muffin pan and serve with generous sprinkling of fresh
finely grated coconut.
