Break off older stems and tie them
together into a bunch with a piece of string
Put spareribs and water into medium
sized pot and bring to boil
Add tied-up watercress stems to pot and
simmer, covered, over low heat for 30 minutes. Removed and discard the
stems and skim off excess oil from the surface
Now put in watercress, add salt, and
simmer for another 10 minutes, covered. Wait till watercress and meat
are tender.
Add pepper and serve with a small dish
of light soya sauce as a dip for the spareribs
