Prawns With Sake And Ginger

A typical Japanese dish
that is quick to prepare and pleasing to the palate.
Ingredients :

Fresh prawns, weighing approx. 300 g
Basic dashi stock
Sake
Light soy sauce
Sugar
Ginger, thinly sliced
Snow peas, blanched in lightly salted
water and chilled |
Method :
- Prepare the prawns by trimming the
whickers and legs of each prawn but do not peel. Use a toothpick to
remove the intestinal vein at the back of the head.
- Place the prawns in a pan with the
dashi, sake, ginger, sugar and soy sauce.
- Simmer for approx. 3 - 4 minutes
over high heat and add the snow peas at the last moment.
- Drain the prawns and peel, leaving
on the head and tail.
- Arrange on a plate with the snow
peas and serve at once.
