Marinade chicken wings in sake for
approx. 30 minutes.
Heat oil, stir-fry chicken wings
until change color and add ginger, spring onions and just enough
water to cover the chicken.
Allow to simmer covered for 10 - 15
minutes, then add the potatoes, sugar and soy sauce and continue to
simmer for another 30 minutes or until potatoes are soft.
Divide chicken wings among serving
plates and garnish each portion with snow peas and strips of orange
or lemon peel.
