                             Vegetable Spice Paste Condiment Recipe

Ingredients :

Garlic, peeled and chopped

Shallots, peeled and chopped

Fresh turmeric, peeled and chopped

Large red chilies, seeded and chopped

Galangal (laos), peeled and thinly sliced

Kencur, peeled and chopped

Coriander seeds

Dried shrimp paste (trasi)

 

Bird's-eye chilies

Cooking oil

Salam leaf

Lemongrass, bruised

Salt

Ground white pepper

 

Method :
  • Process shallots, garlic, galangal, coriander seeds, turmeric, chilies, kencur and dried shrimp paste into a coarse mixture by grinding lightly.
  • Heat oil in wok or saucepan, add the ground paste and remaining ingredients and saute for approx 2 minutes or until the mixture changes color and become fragrant.
  • Set aside and cool before using.
