Method :
- Process shallots, garlic, galangal,
coriander seeds, turmeric, chilies, kencur and dried shrimp paste into a
coarse mixture by grinding lightly.
- Heat oil in wok or saucepan, add the
ground paste and remaining ingredients and saute for approx 2 minutes or
until the mixture changes color and become fragrant.
- Set aside and cool before using.
