         Spicy Pork In Sweet Soy Sauce Recipe - Beh Cheleng Baseh Manis

This delicious sweet pork dish with a hint of ginger and plenty of chilies to spice it up, often appears on festive occasions.

Ingredients :

600 g

500 ml

8 cm

6 - 10 pieces

4 tbsp

2 tbsp

1 tsp

5 cloves

5 stalks

2 tbsp

 

Boneless pork, shoulder or leg, cut in 2 cm cubes

Chicken stock

Ginger, peeled and sliced lengthwise

Bird's-eye chilies, left whole

Sweet soy sauce

Light soy sauce

Crushed black peppercorn

Garlic, peeled and sliced

Shallots, peeled and sliced

Cooking oil

 

Chopped spring onions for garnishing

 

Method :
  • Heat oil in wok and saute shallots and garlic for approx 2 minutes over medium heat or until lightly colored.
  • Add pork and ginger and continue to saute for another 2 minutes over high heat.
  • Add both the sweet and light soy sauce and black peppercorn. Saute for another 1 minute.
  • Pour in the chicken stock and add in the chilies and simmer over medium heat for approx one hour or when pork is tender.
  • When done, there should be little sauce left and the pork should be slightly shiny and brown.
  • If becomes too dry during cooking, add a little chicken stock.
  • Garnish with spring onions and serve.
