          Shrimp In Hot Sauce With Stinkbeans Recipe - Sambal Udang Petai

Even if Stinkbeans (petai) are not available, the shrimp partnered with potatoes and a rich sauce are excellent.

Ingredients :

600 g

5 pods

4 pieces

500 ml

1 tbsp

1 tsp

 

 

 

Spice Paste:

5 stalks

2 cloves

6 pieces

1/2 tsp

2 tbsp

Shrimps, peeled and de-veined

Stink beans (petai) - remove approx 20 beans

Potatoes, peeled and cut into wedges

Coconut milk

Tamarind juice

Salt

 

 

 

 

Shallots

Garlic

Medium size red chilies, sliced

Dried shrimp paste (trasi)

Cooking oil

 

Method :
  • Prepare the spice paste by grinding or pounding all spice ingredients except the oil.
  • Heat oil in a wok and saute the spice paste until fragrant.
  • Add shrimps and saute until they change color.
  • Add in the stink beans and coconut milk and bring to a boil, stirring constantly.
  • Add potatoes, tamarind juice and simmer uncovered until potatoes and shrimps are cooked and the sauce thickens.
  • Season with salt and serve.
