                      Marinated Sour Prawns Recipe - Asam Asam Udang

A delicious, tangy, North Sumatran side dish to accompany rice, the staple diet of the Indonesians. The secret in this recipe is the usage of small sour Carambola fruits ( Belimbing Wuluh ) that is found in abundance in many kitchen gardens throughout the country.

Ingredients :

1 kg

1 pieces

6 pieces

3 pieces

2 Liters

Large prawns (with shells)

Sour Carambola fruits (Belimbing Wuluh), sliced

Shallots, peeled and chopped finely.

Red chillies, sliced finely with the seeds

Water

 

Method :
  • Prepare to heat wok with approx. 2 liters of water, bring to boil and add in the prawns
  • Simmer for 4 minutes, drain, and plunge prawns in iced water for 30 seconds.
  • Drain the prawns, then begin to peel them.
  • Grind or blend shallots, chilies and carambola fruits to a fine paste. Add a little lime or lemon juice if not sour enough.
  • Combine with prawns and serve

 

Tip: Sour grapefruit or sour oranges can be use if carambola fruits are not available
