                  Grilled Minced Duck On Skewer Recipe - Satay Lilit Bebek

Always a favorite, the Indonesian 'Satay' - barbecue meat on thin wooden skewers - is given a new and refreshing twist. Instead of the usual bite-size meat of chicken, beef and mutton, minced duck meat is used.

Ingredients :

Spice Paste:

12 pieces

6 cloves

4 pieces

1/2 tsp

Duck meat, minced

Coconut, freshly grated ( approx 2 cups)

Kaffir lime leaves, very finely shredded

Bird's-eye chilies, very finely chopped

Palm sugar, chopped

Black peppercorns, crushed

Salt

Satay skewers, thin wooden/bamboo sticks. (available in  asian supermakets)

 

 

 

Shallots, peeled and sliced

Garlic, peeled and sliced

Medium size red chilies, sliced

Coriander seeds

Dried shrimp paste (trasi)

Black peppercorns

Candlenuts

Fresh turmeric, peeled and sliced

Galangal (laos), peeled and sliced - choose young shoots for best flavor.

Kencur, peeled and sliced  (commonly known as lesser galangal)

Cooking oil

 

Pinch of freshly grated nutmeg.

 

Method :
  • Grind or blend all spice paste ingredients, except oil.
  • Heat oil in pan or wok and saute spice paste mixture for approx 5 minutes and let cool.
  • Combine with minced duck meat and all other ingredients
  • Mould about 12 tablespoons of the above mixture on each 'satay skewer' and grill over hot charcoal until cooked and golden brown.
  • When serving, garnish with lots of cucumber.
