Grilled Fish In Banana Leaf

Another common Padang-style
dish that is a favorite with the locals. The banana leaf lends a unique
fragrant taste to the grilled fish.

Fillet of snapper, skinned and boneless
Spice paste for seafood
Banana leaves, cut into 15 cm squares
Lemon basil
Salam leaves
Salt

Method :
- To prepare fish fillet, season it with
salt and cover evenly with seafood spice paste, then leave to marinate
in a cool place for al least 6 hours covered.
- Put each fillet in the center of each
banana leaf and place 2 sprigs of lemon basil and 1 salam leaf.
- Fold banana leaves around each of the
fillet in the shape of a small parcel and use toothpicks as
fasteners.
- Steam the parcels for approx 15 minutes.
- Place the parcels over a charcoal grill
and cook for another 5 minutes or until banana leaves are evenly
browned.
- Serve with the banana leaves intact for
guest to open to discover the fillet inside.
