                   Grilled Fish In Banana Leaf Recipe - Pesan Be Pasih

Another common Padang-style dish that is a favorite with the locals. The banana leaf lends a unique fragrant taste to the grilled fish.

Ingredients :

600 g

250 ml

4 pieces

8 sprigs

4 pieces

1 tsp

 

Fillet of snapper, skinned and boneless

Spice paste for seafood

Banana leaves, cut into 15 cm squares

Lemon basil

Salam leaves

Salt

Method :
  • To prepare fish fillet, season it with salt and cover evenly with seafood spice paste, then leave to marinate in a cool place for al least 6 hours covered.
  • Put each fillet in the center of each banana leaf and place 2 sprigs of lemon basil and 1 salam leaf.
  • Fold banana leaves around each of the fillet in the shape of a small parcel and use  toothpicks as fasteners.
  • Steam the parcels for approx 15 minutes.
  • Place the parcels over a charcoal grill and cook for another 5 minutes or until banana leaves are evenly browned.
  • Serve with the banana leaves intact for guest to open to discover the fillet inside.
