                              Eggs In Coconut Milk Curry Recipe - Gulai Telur

A typical full-bodied West Sumatran dish often served Padang-style - together with a variety of other dishes and often accompanied with rice.

Ingredients :

8 pieces

500 ml

Spice Paste:

 

5 stalks

3 cloves

4 pieces

2.5 cm

2.5 cm

1 cm

Hard-boiled eggs, peeled

Coconut milk

Turmeric leaf, shredded

Tamarind juice

Salt to taste

 

Fried shallots for garnishing

 

 

 

 

Shallots, peeled and sliced

Garlic

Bird's-eye chilies

Fresh ginger, peeled and chopped

Galangal (laos), peeled and chopped

Fresh turmeric, peeled and sliced

 

 

Method :
  • Grind or blend spice paste ingredients coarsely.
  • Bring coconut milk gradually to a boil and add in the spice paste.
  • Add turmeric leaf and and the hard-boiled eggs
  • Simmer until sauce is slightly thickens, then add tamarind juice and salt and simmer for approx 2 more minutes.
  • Serve garnished with fried shallots.
