Balinese Squid In Curry Sauce Recipe - Kenus Mebaseh Bali

A delightful alternative to
fish curry, but if squid is not available, replace with large cuttlefish
or any other firm fish fillet such as sea bass or snapper.

Baby squids
Spice paste for seafood
Chicken stock
Medium-sized red chilies, seeded and sliced
Shallots, peeled and sliced
Cooking Oil
Salt
Ground white pepper
Lime juice, freshly squeezed
Lemon basil, sliced
Fried shallots for garnishing

Method :
- To prepare squids, remove the skin and
pull out the tentacles and head. Cut off and discard the head and beaky
portion, but reserve the tentacles. Clean the squids thoroughly and
marinade with lime juice, pepper and salt.
- Heat oil in wok, then add shallots,
chilies and squids and saute for approx. 2 minutes over high heat.
- Add
seafood spice paste and
continue to saute for another minute or until fragrant.
- Pour in the chicken stock, add the
sliced basil and bring to a boil.
- Reduce heat and simmer for approx. one
more minute.
- Season to taste, garnish with some fried
shallots and serve.
