Balinese Duck In Creamy Curry Recipe - (Bebek Menyatnyat)

On festive occasions, duck is a great favorite among the people of Bali

Ingredients :

Spice Paste:

12 pieces

6 cloves

4 pieces

2 tsp

1 tsp

1/2 tsp

3 pieces

5 cm

2 1/2 cm

2 1/2 cm

2 pieces

Whole duck, approx. 1.5 - 2 kg in weight

Coconut milk

Black peppercorns, crushed

Salt

Salam leaves

Lemongrass, bruised

 

Fried shallots for garnishing

 

 

 

Shallots, peeled and sliced

Garlic, peeled and sliced

Medium size red chilies, sliced

Coriander seeds, crushed

Dried shrimp paste (trasi)

Black peppercorns, crushed

Candlenuts

Fresh turmeric, peeled and sliced

Galangal (laos), peeled and sliced

Kencur, peeled and sliced

Cooking oil

Cloves

 

Pinch of freshly grated nutmeg.

 

Method :
  • Prepare duck by cutting it into 10 - 12 pieces and pat dry.
  • Prepare spice paste by grinding or blending all the spice ingredients except oil.
  • Heat oil in wok and saute the spice paste for approx. 2 minutes or until fragrant.
  • Put in the duck, increase heat and saute for another 3 minutes, stirring constantly.
  • Add coconut milk and all other ingredients, except fried shallots, and simmer uncovered until duck is tender and the sauce has thickened.
  • Garnish with fried shallots and serve with rice.
