Spice Stuffed Okra Recipe

Ingredients

500 g Okra ( Ladies' Fingers), washed and dried
1 piece Onion, medium sized, chopped
2 pieces Green Chilies, deseeded and chopped
2 cm Ginger, finely chopped
1 piece Tomato, chopped
3 tbsp Cooking oil
1 tsp Cumin seeds
- Pinch of asafoetida powder
 

The Stuffing

 
3 tsp Coriander powder
2 tsp Turmeric powder
2 tsp Fennel powder
2 tsp Dried mango powder
1 tsp Chili powder
1/2 tsp Salt

 

Method :

  • Cut off the stalk of each okra and make a lengthwise slit.

  • Combine stuffing ingredients, mixing well, then stuff each okra with the mixture.

  • Heat oil and saute cumin seeds until it starts to crackle.

  • Add onion, chillies and ginger and saute until onions turns transparent.

  • Add in the pinch of asafoetida and quickly follow by the tomato and cook until it turns pulpy.

  • Add in okra, cook for approx. 5 minutes or until tender and well coated with the sauce.
