Southern Indian Dessert Recipe

(channa dal payasam)

RECIPES OF INDIA

Payasam is made of sweetened milk with a variety of nuts, dal, pearl sago or even wheat-flour vermicelli added. This version is enriched with coconut milk.

Ingredients

500 ml Milk
125 ml Thick coconut milk
50 g Palm sugar
2 tbsp Bengal gram, split
1 tbsp Ghee
1 tbsp Raw cashew nuts, coarsely chopped
1 tbsp Raisins or sultanas
2 pieces Green cardamom pods, bruised

 

Method :

  • Wash the Bengal gram and simmer in 250 ml water until half cooked.

  • Add milk and simmer until the gram is very soft, then add the coconut milk and palm sugar.

  • Stir frequently while cooking until the mixture thickens.

  • Heat the ghee in a pan and saute the cardamom pods, cashew nuts and raisins until golden brown, then add to the cooked mixture.

  • Although payasam is normally served warm or at room temperature, it can be chilled of preferred.
