Southern Indian Dessert Recipe
(channa dal payasam)

Payasam is made of sweetened milk with a
variety of nuts, dal, pearl sago or even wheat-flour vermicelli added. This version is
enriched with coconut milk.
Ingredients |
| 500 ml |
Milk |
| 125 ml |
Thick coconut milk |
| 50 g |
Palm sugar |
| 2 tbsp |
Bengal gram, split |
| 1 tbsp |
Ghee |
| 1 tbsp |
Raw cashew nuts, coarsely chopped |
| 1 tbsp |
Raisins or sultanas |
| 2 pieces |
Green cardamom pods, bruised |
Method :

Wash the Bengal gram and simmer in 250 ml water
until half cooked.

Add milk and simmer until the gram is very soft,
then add the coconut milk and palm sugar.

Stir frequently while cooking until the mixture
thickens.

Heat the ghee in a pan and saute the cardamom
pods, cashew nuts and raisins until golden brown, then add to the cooked mixture.

Although payasam is normally served warm or at
room temperature, it can be chilled of preferred.
