Rice Flour Pancake Recipe - Appam (

A rice flour pancake that
makes an unusual breakfast dish. Preparing for this dish can take up
to a day earlier, but it'll be worth the time.

Rice
Cooked rice
Plain flour
Sugar
Salt
Thick coconut milk
Thin coconut milk
Baking powder
Some brown sugar.

Method :
- Wash and soak rice for 5 hours and strain.
- Put strain rice, cooked rice, flour,
sugar, salt and 3/4 cup of thin coconut milk into blender and process
until a fine paste.
- Pour into pot and remaining thin coconut
milk. Leave to ferment for 12 hours, preferably overnight. Refrigerate
the thick coconut milk/
- Next day, add baking powder into
fermented mixture and stir well.
- Heat a small wok and put two tablespoons
of batter into the center, swivel wok to spread batter in a thin pancake
with a rather thick center.
- Quickly add one tablespoon of thick
coconut milk
- Cover and cook over low heat until sides
of the pancake are lightly brown.
- Remove and serve with a sprinkle of
brown sugar.
