Lemon Scented Rice Recipe

Ingredients |
| 300 g |
Long grained rice, washed and drained |
| 3 tbsp |
Lemon juice |
| 1 sprig |
Curry leaves |
| 1piece |
Green chili, finely chopped |
| 3 pieces |
Dried chilies, broken in 2cm lengths |
| 1 tbsp |
Cooking oil |
| 1 tbsp |
Raw cashews, split and lightly toasted |
| 1 tbsp |
Water |
| 1 tsp |
Black mustard seeds |
| 1 tsp |
Blackgram dal, husked (urad dal) |
| 1 tsp |
Bengal gram (channa
dal), split and lightly toasted |
| 1 tsp |
Salt |
| 1/2 tsp |
Ginger, finely chopped |
| 1/2 tsp |
Turmeric powder |
| - |
Coriander leaves to garnish (cilantro) |

Pinch
asafoetida powder |
Method :

Wash and boil rice in plenty of water until the
grains are just tender, drain and set aside.

Heat oil in a pan and add mustard seeds, wait
for it to start popping.

Add asafoetida, curry leaves, green chili, dried
chilies, ginger, cashews, blackgram dal, Bengal gram and turmeric powder.

Saute for a moment, than add lemon juice, salt
and water.

Allow to simmer for approx. 2 - 3 minutes, then
add in the rice and heat through.

Serve garnish with coriander leaves.
