Indian Pork Curry Recipe
(vindaloo)

Vindaloo can be very pungent, although this
recipe should cause a gentle sweat. Choose pork with some fat on it.
Ingredients |
| 500 g |
Pork with some fat; cut into bite-sized cubes |
| 250 ml |
Coconut vinegar |
| 8 cloves |
Garlic |
| 3 1/2 tsp |
Chili powder |
| 4 pieces |
Green chilies |
| 1 tsp |
Black peppercorns |
| 2 cm |
Fresh ginger, finely chopped |
| 1 tsp |
Cumin seeds |
| 2 pieces |
Onions, chopped |
| 1/2 tsp |
Salt |
| 1 tsp |
Sugar |
| 2 tbsp |
Brandy. |
Method :

Blend the garlic, pepper, chili powder, chilies,
ginger and cumin seeds with the vinegar.

Use the spice mix above to marinate the pork for
at least 2 hours.

Fried approx. 1 tablespoon of pork fat until the
lard separates, then saute the onion until golden brown, then add the pork, marinade and
salt.

Simmer until the pork is tender and the gravy is
thick.

Pour off the excess the oil then add the sugar
and brandy.

Stir through and serve with bread or rice.
